Situated in the heart of the cool climate Mount Benson growing region, the Norfolk Rise Vineyard is planted on 180 hectares of undulating coastal hills. Within 5 kilometres of the ocean at 37 degrees south of the equator our climate and long slow ripening period is perfectly suited for natural acid retention, so important for this wine style.
The grapes were harvested from our estate vineyard in March and were crushed and pressed into stainless fermenters. Specialised yeasts were chosen to maximise the fresh fruit aromas of the bouquet, while lees stirring gave this wine a more complex palate. The wine was fermented until dry to achieve this more complex spicy finish.
